Rosemary is a typical Mediterranean plant that grows in coastal regions and is commonly found on the rocky slopes of Mediterranean areas. Its needle-like, leathery leaves are rich in essential oil, tannins, bitter substances, flavonoids and resins. Used as a ritual incense plant since ancient times, this intensely aromatic evergreen subshrub has been used as a culinary spice for centuries, thanks to its spicy and slightly bitter flavour.
